White Kabsa 🇸🇦الكبسه البيضا @canarybasmati Happy national day to the beautiful kingdom 🇸🇦 Ingredients: - 1.5 kgs lamb pieces - 2 cups @canarybasmati - 1 tbsp ghee - 2 tbsps salt - 3 bay leaves - 1 cinnamon stick - 4 cardamom pods - 3 cloves - 500 grams chili - nuts for garnish - 2 cloves of garlic - 2 lemons - start by lightly searing the lamb in the drizzle of ghee and aromatics. Add the 6 cups of water and 4-5 chilies ( heat of the chilies is entirely up to you) - let the pot boil on medium heat for about an hour and a half salting it only the last 10 minutes. ( I added about a tbsp of salt) - wash and soak the rice for 30 minutes then add it to the pot. You can add it right on top of the meat or remove it first and broil it in the oven. Up to you. - blend the chili garlic lemon and salt into a very smooth chutney. - add the rice to the pot and make sure that the stock is 1 cm above the rice. Once it boils and blooms. Cover drop the heat and let it cook for 20 minutes. - flip the rice on the serving plate. Top it with the lamb. The toasted nuts. - serve it with the chutney and enjoy. #food #cooking #saudi #ksa
