Chili Paste •	6 cloves garlic •	1 bird's eye chili •	5 shallots •	1 tbsp oyster sauce •	1 tbsp chili sauce •	Water, as needed Mango Pickle •	1 green mango •	1 ½ tbsp sugar •	1 tbsp fish sauce •	3 shallots, sliced •	1 calamansi, juiced •	½ lime, juiced •	1 bird's eye chili, chopped •	2 stalks coriander, chopped Crispy Fish •	1 seabass (sourced from The Fish Farm, locally produced) •	Cornstarch •	Salt Instructions 1.	First, pound the garlic, bird's eye chili, and shallots into a paste and set it aside. Firmly hold the green mango and slice it thinly. In a bowl, mix the mango strips with sugar, fish sauce, shallots, calamansi juice, lime juice, chili, and coriander. 2.	Season the seabass with salt and a light coating of cornstarch. Deep fry in hot oil until the crust turns golden, letting it sit on one side to form a crust before flipping. Local produce, like this seabass goes from farm to store in 24 hours. They are fresher, longer-lasting, sweet, and flaky. You can spot them with a red circle tag. 3.	Drain excess oil from the pan, then sauté the chili paste until fragrant. Add oyster sauce, chili sauce, and a bit of water, stirring until well combined. Pour the chili sauce over, spoon the mango salad on top, and enjoy!
