Mushrooms are one of those things that are SO much less expensive in bulk- so learning a few easy ways to preserve them is a great way to save on your grocery bill, on packaging and on prep work later! 🍄  To freeze:  🍄Slices- Using a small amount of oil to make sure they don’t stick to the pan, thickly slice clean mushrooms and sauté until they’ve lost at least half of their volume and have turned golden brown. For the best results, pat dry, freeze on a baking sheet, and then transfer for long-term storage.  🍄 Duxelles- Most duxelles recipes are very dry, so they’re great for freezing! Make your favorite recipe (I use one I’ve adapted from Julia Child pop into ice cube molds, freeze, and then transfer containers. My duxelles recipe: 1/2 Pound small mushrooms, Minced and squeezed to remove liquid 1 Medium shallot, minced 2 Cloves Garlic, Minced 2 TBs Parsley, minced 1 Tbs Butter Sauté all ingredients in butter until golden brown! 🍄 Mushroom Stock I use one part mushrooms to two parts water and let simmer for about an hour! I add mushroom stock into other veggie stock so I don’t add seasoning, but you can add whatever spices and herbs you’d like! To dehydrate: Depending on the mushroom, you can dehydrate mushrooms both in slices and whole! There is no need to cook these beforehand because you’re removing the moisture content, but I tend to only dehydrate mushrooms that I’ll either be using in soups or for seasoning because dehydrated mushrooms don’t hold their structure well. 🍄Dehydrated Mushroom seasoning: I combined chopped 1/4 cup each dehydrated mushrooms, onions, garlic, green onion, and parsley plus 1/2 cup of salt then broke it down to size to create a great rub for meats or seasoning for many dishes!  If you pop mushrooms into a food processor you can also make mushroom powder to add to smoothies like I did with this lion’s mane!
