This recipe was super easy to throw together and was full of flavour😍a new lunch time fave! get instant access to 350 more high protein recipes when you join my @kirstyskitchenclub app - link in bio ✨ *makes 2x servings* Ingredients - 120g pasta ( uncooked weight ) - 300g chicken breast - 100g baby plum tomatoes - 30g mayonnaise ( I used hellmans lighter than light ) - 50g cream cheese ( I used Philadelphia lightest ) - 30g reduced fat pesto - 30g grated mozzarella - Handful of salad leaves ( I used rocket/ arugula ) - Pinch of salt & pepper Method - Pop your pasta on to boil. - Season your chicken breast with a pinch of salt & pepper then pop in the airfryer or oven for 30 minutes at 200C until cooked through and no longer pink. - Drain your pasta and leave to cool. Meanwhile, pull apart your cooked chicken until completely shredded. - Add your cooked pasta, shredded chicken, rocket, cream cheese, mayonnaise, pesto, mozzarella cheese, salt & pepper to a bowl then mix until fully combined and enjoy!!
