@kaididey: I’ve wanted to share this recipe with you for so long! Sweet potato brownies: Gluten free, no added sugar (if you skip the chocolate chips), and of course guilt free… as I say to myself finishing the entire pan. 1:1 ratio for sweet potato to nut, since sizes vary per potato. Below is my fave recipe to use. 1/2 cup mashed sweet potato; 1/2 cup peanut butter (or nut butter of choice); 2 eggs; 1 tbsp maple syrup (or honey); 1 tsp vanilla; 1/2 tsp baking soda; pinch of kosher sea salt; 2 tbsp unsweetened cocoa powder; 1/8 cup semi sweet chocolate chips*. Mix all ingredients well, place in small casserole dish (I used 5”x7” le creuset) lined with parchment paper, bake at 350F/175C for 20-22 min.
