Degi Chicken Pulao (Winter Special Comfort food Episode 3)  Here is a simple recipe for chicken pulao: Ingredients: 6 cups basmati rice 1.5 kgs chicken, cut into pieces 2 large onion, thinly sliced 3 tomatoes, chopped 7 green chilies, slit 8 cloves garlic, minced 3-inches piece of ginger, grated 1 tablespoon cumin seeds crushed 1 tablespoon coriander seeds crushed 1 cinnamon stick  4 bay leaves  8 cloves  4 black cardamoms 2 tablespoons red chili flakes  1/2 cup dried plums 1 cup yogurt 1 cup oil Salt to taste Fresh coriander leaves for garnish Instructions: 1. Wash the rice thoroughly and soak it in water for 30 minutes. Drain and set aside. 2. Heat oil in a large pot over medium heat.  3. Add sliced onions and sauté until golden brown. 4. Add minced garlic and grated ginger. Sauté for a minute until fragrant. Add cloves, black cardamoms, cinnamon stick and bay leaves. Let them splutter.  5. Add chicken pieces and cook until they are browned on all sides. 6. Add yogurt, red chili flakes , coriander & cumin seeds , and salt. Mix well and cook for 6-7 minutes.  7. Add sliced tomatoes , green chillies and dried plums. Mix well and cook for another 2 minutes. 8- Add water , cover the pot and bring to a boil.  9. Add soaked and drained rice to the pot. Stir gently.  10. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes, or until the rice is cooked and the water is absorbed. 11. Once the rice is cooked, place on dam on low heat for 20 minutes. Cover tightly with tea towel and lid on the top. After remove from heat and let it sit covered for 5 minutes. 12. Fluff the rice with a spoon and garnish with fresh coriander leaves and fried onions.  13. Serve hot with raita or salad.
