I’ve been making this relish for years ever since I first tried it on @Gordon Ramsay Ultimate Steak Sandwich!  It’s one of my favorite relish style condiments and absolutely love this pizza!  Ingredients: • olive oil @Graza  • 2-3 tbsp Shallots, diced • 1 medium Jalapeño, diced • 9-10 oz of mixed color Cherry tomatoes, halved • salt and pepper • 2 tsp rice wine vinegar • thinly sliced basil, about 4-6 medium to large leaves For the pizza: • premade or homemade pizza dough • the relish we made • 1/2 cup grilled chicken • 2/3 cup fresh mozzarella pearls • olive oil and Parmesan Instructions: 1. Start by heating up a skillet with olive oil over medium heat and adding your shallots and jalapeño. Let these start to soften, about 2 minutes, then add the cherry tomatoes.  2. Stir and season with salt and pepper, we will adjust for seasoning later so don’t add too much! Just a pinch of each.  3. After about 5-7 minutes, the tomatoes start to break down and the skins will blister.  using the back of your wooden spoon, gently press the tomatoes down to help them break down quicker.  4. Stir in the rice wine vinegar and let this simmer and cook down for 5-7 more minutes. When the consistency is like a relish, cut the heat and stir in the basil!  5. To make the pizza, preheat your oven to 475F with your pizza stone or pan in the oven while it preheats. The we can stretch out your dough and place it on a floured pizza peel.  Place down the relish and spread it out evenly! The entire batch of relish can be used for one 10in pizza.  Then add the remaining toppings.  6. Bake for 12-15 mins or until the cheese is melted and both the bottom and crust is crispy and cooked through.  Take it out and right after make sure you top it off with Parmesan and olive oil.
