BBQ Pulled Pork, but make it PLANTS  BBQ Pulled Pork is such a comfort food, the sweet tanginess from the sauce, the slightly chewy crust & blend of textures, a forkful of juicy nostalgia. Problem is, I don’t eat pork, but sometimes I still want to enjoy the experience, so much to my delight, jackfruit mimics pulled pork with it’s soft but fibrous “pull-apart” quality. And it soaks up the sauce really well so it still has that juicy bite. Jackfruit is high in fiber and easier to digest than fatty cuts of pork. And while there is no protein in jackfruit, adding beans fills in the nutritional gaps. For this meal, I paired the BBQ Jackfruit with a side of rice, creamy sweet potato, and to cut the sweet, quick pickled onions, and an apple cider spritz (apple cider & sparkling water). See all of the recipes below, they’re also on my Substack- @probsaubs BBQ Jackfruit Ingredients: 1, 15oz can of young green jackfruit, drained, rinsed, and shredded 1, 15oz can of beans, drained & rinsed- black, pinto, or red kidney work best 1/2 cup bbq sauce 1 tbsp olive oil 1/2 tsp paprika 1/4 tsp garlic powder salt & pepper to taste Instructions: 1. Preheat your air fryer to 350*F 2. Add all of your ingredients to a bowl and mix it all together 3. Put your disposable paper liners in your air fryer, and add your mixture spreading it around evenly 4. Air fry for 10 minutes at 350, then 5 extra minutes at 380 to crisp up the top 5. Add extra bbq sauce if you want it juicier! Quick Pickled Onions - Slice a red onion in think slices and put them into a maison jar or another heat-proof jar. - In a saucepan, mix 1/2 cup of water, 1/2 cup apple cider vinegar, 1&1/2 tbsp maple syrup, 1&1/2 tsp salt & bring to a simmer. Pour the liquid into the jar to cover the onions. Use a spoon to press the onions down so they are all submerged and there are no air bubbles. - Once it has cooled, about 30 minutes, your onions should be ready for consumption.
