Replying to @Kylie full bagel recipe here - makes about 12 bagels! 725g bread flour 80g whole wheat flour 450g filtered room temp water 200g sourdough starter 20g sea salt 35g honey instructions: 1. add all ingredients to a bowl & mix by hand until a ball forms 2. let the dough rest for 45 mins in the bowl 3. Knead the dough for 4-5 minutes until its smoother and less sticky 4. cover the bowl and let the dough rise for 8 hours 5. divide the dough into 12 pieces and form into a ball - let rest 15 mins 6. create a hole in each piece with your fingers 7. place the bagels in the fridge covered tightly to ferment and rise 8. next morning: boil each bagel for 2 minutes on each side 9. brush with egg wash & add your toppings 10. bake for 30 mins at 400 11. slice & enjoy!
