I’ve been in search of Amazing Katsu in Austin for years! I’ve tried restaurants all over the world including Japan and can say I have somewhat of a high standard for Katsu. My ideal Katsu is perfectly fried, perfectly seasoned, housemade bread crumbs, delicious Katsu sauce, and thick yet tender meat.  @kane.cedarpark uses kurobuta black pig for their katsu and served it bone on. It’ll cost you 25 but with the thick cut and quality of meat it’s totally worth it. They occasionally use Iberico pork but it sounds like they’re looking for a new supplier. The katsu was absolutely delicious and easily the best I’ve had in town tho it would be even better with homemade bread crumbs imo. It comes with miso soup and a salad and they make the dressings and sauces all in house. The Nameko miso soup was so good and I liked the little nameko inside. Miso is a delicate soup and often times if the water is too hot, the miso denatures and loses that flavor. This one was perfect and reminds me of the bowls i had in my Ryokan in Japan in the winter. I recommend their hamachi carpaccio and uni pieces. Their uni is surprisingly high quality for a small neighborhood restaurant imo. It matches the quality you’ll find in the fancy omakase restaurants in Austin. The matcha tiramisu was sold out so they made me a custom matcha crepe cake. it was so amazing I licked the plate and told them they need to put it on the menu. if you stop by you should ask for it! they are currently resy only and you can make resys online ! #austinfoodadventures #atxfoodtime #cedarpark
