Turn off cross website tracking, or if you’re using a Mac/Safari, enable Advanced Data protection. If on campus WiFi, use a Location changer VPN to change to a different city. It’s not much, but it’s all you got.

This is true, to a degree, they can see when you click off and on but they can't see what you clicked onto. They can also see when you copy paste on canvas, word, and docs. (avoid peepers by turning your work into a PDF)
