Dulce de Leche Cupcakes 🍂🧡 Ingredients: Cupcakes - 90 g brown sugar - 100 g all purpose flour - 1 tsp baking powder - 1/4 tsp salt - 41 g unsalted butter - 32 g vegetable oil  - 1 egg white - 1 tsp vanilla extract - 90 g buttermilk Chai Swirl - 3 tbsp light brown sugar - 2 tsp chai spice - 120 g dulce de leche Buttercream - 156 g unsalted butter - 1/4 tsp salt - 250 g powdered sugar - 1 tsp vanilla extract - 1 tbsp heavy cream - 40 g dulce de leche - 1 tsp chai spice Recipe: Cupcakes 1. Beat together the sugar, flour, baking powder, salt, and cubed butter in a bowl until no large lumps remain.  2. Add the buttermilk, oil, egg white, and vanilla and whisk together.  Chai swirl: 1. Mix together brown sugar and chai spice. 2. Preheat oven to 350F / 175 C. Line a muffin tin with 6 cupcake liners.   3. Place 2 tbsp of cupcake batter in each liner and top with 1 tsp of chai spice.  4. Add remaining batter to liners and top with chai spice.  5. Gently swirl batter with toothpick.  6. Bake for 15-18 minutes, or until a toothpick inserted into the centre of the cupcakes comes out clean.  Buttercream: 1. Beat the butter and salt together for 1 minute.  2. Slowly beat in the powdered sugar.  3. Split buttercream into two bowls. In one bowl, beat in the vanilla and heavy cream. To the other bowl, beat in the dulce de leche and chai spice.  4. Once the cupcakes have cooled, use a knife to carve out a hole in the centre of each cupcake and fill with 1 tbsp of dulce de leche.  5. Place each buttercream colour into its own piping bag and place those into one piping bag.  6. Frost each cupcake, and drizzle more dulce de leche if desired.  7.
