For the Kibbeh Dough ½ cup fine bulgur, washed ¼ cup water (to soak the bulgur) 1 onion 1½ tsp paprika 1½ tsp seven spices  1 tsp salt 3 sprigs fresh mint ¼ cup flour Instructions: Soak the bulgur in the water for 10–15 minutes. In a food processor, blend the onion, mint, and spices. Drain from the excess fluids and add to the bulgur. Add the flour, and mix until a dough forms. Shape into small balls. Set aside. For the Yogurt Sauce 1.5 kg yogurt (laban) 2 Tbsp cornflour (cornstarch) Instructions: Mix the yogurt and cornflour together until smooth. Pass through a sieve to remove any lumps. Place on medium heat, stirring constantly until it begins to thicken. Add the kibbeh balls and the cooked chickpeas. To Finish 5 cloves garlic, mashed 3 Tbsp olive oil 1 Tbsp dried mint Fry the mashed garlic with the dried mint; sauté until fragrant. Add the garlic-mint mixture to the hot yogurt sauce.
