To make things easy, I buy the pig ear from h-mart. It’s already seasoned but I sometimes find it too salty, so that’s why I soak it in water (and sake to get rid of the gamey flavor!) before marinating. recipe: - 1/2 pound pig ear (already made and pre-sliced) - 1 tablespoon super tasty chili oil - our homemade chili oil is coming soon ;) - 1 teaspoon soy sauce (add more or less depending on how salty you want it to be) - 2 garlic, grated - 1/2 tablespoon Chinese black vinegar - green onion and cilantro, chopped - 1 teaspoon sesame oil - sesame seeds 1. OPTIONAL - soak sliced pig ear in water and 1 tablespoon sake (or soju) for 5 minutes. This helps make it less salty and less gamey. Then, strain pig ear and rinse. Pat dry with a paper towel. 2. Grate raw garlic and add to pig ear with your favorite chili oil! I recommend a super savory and slightly spicy one. A good chili oil will transform this dish from mid to top tier as this will be the base of your sauce! Ours is perfect hehe 3. Add some soy sauce and Chinese black vinegar. Mix well. 4. Chop with green onion and cilantro. Add on top and mix with sesame oil and sesame seeds. 5. I recommend to marinate in the fridge for 1-2 hours before eating. They taste ahmaaazing with noodles and dumplings. Cucumbers too!!
