HONEY BUTTER CORNBREAD CHILI CASSEROLE Serves 6 . INGREDIENTS: For the chili: - 1 Tbsp olive oil - 1 lb ground beef  - 1 large yellow onion, diced - 1 red bell pepper, diced - 4 cloves garlic, minced - 4 Tbsp chili powder - 2 tsp cumin - 1 tsp dried oregano - 1 tsp smoked paprika - 1/4 tsp cayenne pepper - 1 (15-oz) can kidney beans - 1 (28-oz) can crushed tomatoes - 1 cup beef stock - 1 cup corn kernels, fresh or frozen - Kosher salt and black pepper, to taste - Toppings of choice (I used cheddar cheese, sour cream and chives) . For the cornbread: - 1 cup fine cornmeal - 1 cup all-purpose flour - 1/4 cup granulated sugar - 2 tsp baking powder - 1/2 tsp kosher salt - 1 cup buttermilk - 2 eggs  - 8 Tbsp butter, melted and divided - 3 Tbsp honey, divided . INSTRUCTIONS: 1) Preheat oven to 375F. Heat the olive oil in a large oven-safe skillet over medium-high heat, then add the ground beef, season with salt and pepper, and cook until browned. 2) Add the onion and bell pepper and sauté for 5-7 minutes, or until onion is soft and translucent. 3) Add the garlic and spices, and cook for an additional minute, or until fragrant. 4) Add the beans, crushed tomatoes, and beef stock. Bring to a boil, then reduce heat to medium-low and simmer, uncovered, for 15-20 minutes. 5) Meanwhile, make the cornbread batter: In a large bowl, whisk together the dry ingredients (cornmeal, flour, sugar, baking powder, and salt). Add the buttermilk, eggs, 6 Tbsp butter, and 2 Tbsp honey. Lightly beat the eggs, then fold the batter together with a spatula until combined. 6) Remove chili from heat. Dollop the cornbread batter on top and gently spread it out. 7) Bake for 25-30 minutes. 8) Stir together the remaining 2 Tbsp butter and 1 Tbsp honey and brush over the top.
