Cozy Ham and Bean Soup  1 onion, finely diced  3 ribs of celery, finely chopped  3 carrots, peeled and chopped  3-4 cloves of garlic, minced 2 bay leaves  2 tablespoons fresh chopped thyme  3 tablespoons of bacon grease, butter or oil of choice for sautéing veggies and making roux 3 tablespoons of flour  1 heaping teaspoon Ham flavored Better than Bouillon (optional but really adds to the ham flavor)  1-2 containers chicken stock or broth.  1 pound (give or take) chopped pieces of ham  3 cans of great northern beans, drained and rinsed  Splash of heavy cream  Add bacon fat or oil into large stock pot over medium heat. Once melted and hot, add celery and onion. Cook until those have softened, 3-4 minutes and then add garlic. Once that has softened, add the flour and stir with the veggies, letting the raw edge cook off the flour.  Then gradually add about 1 1/2-2 cups of chicken broth/stock, whisking the entire time. There will be some lumps in the flour at first but give it time, they will smooth out. This is what will make the soup thicker and creamier in the end. Once smooth, add the rest of the first container of stock.   Then add carrots, beans, ham, bay leaves, thyme and bouillon. Stir to combine and add more stock to cover all ingredients. Bring to a boil and then reduce to a simmer. Cover with lid slightly ajar and let cook until carrots have softened. If you have time to let it cook longer, the soup will be better. I cooked this batch for about 2 hours.  Lastly, and this is also optional, add a good splash of cream at the end and stir it in. It makes the soup velvety rich and delicious.
