I just learned and it seems to be working for my last inclusion loaves. Do an autolyse for 1 hr. Allow the gluten to develop. Then add them in before you do the stretch & folds. Some people only for after the third one. But it allows the gluten to form around the inclusions causing it to rip less. I had no holes my last cheddar jalapeno loaf and I use cubed cheese
