@_celestepereira: I just made a basic bish today but she was AMAZING as expected. 🍞😇 FULL RECIPE: 100-115g of bubbly starter 325g of water 500g of flour 10g salt 10g honey 1. Combine water and starter in your bowl, it will be milky and chunky (ew) 2. Add flour and mix roughly. Throw in the salt and honey and then mix more. 3. Wait 45-60 mins ⏰ 4. Begin 1st set of stretch and folds. This is ONE STRETCH AND FOLD PER 1/4 TURN. So you will treat it like a square and use “4 sides” 5. Wait 30 mins ⏰ 6. Another set of stretch and folds, 1/4 turns bitches! 7. Wait another 30 mins ⏰ 8. Stretch and folds for the last time 9. BULK FERMENTATION (8-15hrs) until doubled in size and domed ontop. If you push gently into it you will see it bounce back and it will NOT stick to your finger 10. After BF, you will take it out and stretch GENTLY into a rectangle - use the tri-fold method and then roll it up into a boule. Put it on the paper and plop it into a bowl. 11. Put in the fridge overnight for cold proof (you can 100% skip this and bake right after BF) 12. Preheat your dutch oven in your oven at 450° 13. Bake for 25 mins 14. Lower temp to 425° and remove the lid. Bake for 25 mins again 15.
