Ok I know how to do those candys but it take DAYS literally. Days to make it right. But here I go. This is the way my grandma used to do it. I fully recommend do sweet potato and pumpkin to make it worth. So here uno with in Mexican style if you have doubts I can answer to clear them : clean the sweet potato peal them is optional cut in BIG chunks, and put in a VERY BIG pot like tall with water like 4L and add 1 Big tablespoon the ones that you use for cooking and serve soups of food grade lime and mix. Let it rest untill gets separated. Then take the water out in other containers with care you only need the water not the lime. And you add your fruits in that water. That will make them harder so don’t end up being a pure while cooking. You need to leave them at lest 24 Hours the fruit needs to be completely submerged you can put something in top cuz usually pumpkin and sweet potato flotes. After 24 house you drain them a give a ligth wash with clear water. Then with a fork make holes in the fruit to help the caramel go inside of the fruit not to much holes . Then you need another big like very tall pot cuz the caramel burns horrible. In that pith you add the fruit and enough water to cover the fruits. And you add one pound of sugar per 2 pounds of fruit. Then you put the pot to boil at medium. It will take at least 3 hours of simmer DO NOT STIR just let them simmer all covered in the mix if some of the top fruits get out of water you can move them but not too much or the coat will be chunky and not tasteful . The mix will make a caramel that will cover the fruits. If you see that the caramel no longer cover the fruit and is not already an even coat in all the fruits you can add a bit more of water. You know when is ready cuz the fuits look cristalized slightly transparent. Usually takes 3 hours and half. Then you take one per one out and let them cold over wax paper. To have the texture you liked it need to be dried at least per 2-3 days! And that’s it!

You need to boil them until you can poke it but not soft, then rinse a couple times, then boil with some water and sugar until it’s tender and sugar has formed a light caramel, the texture comes from drying them out just taking out of the syrup and leaving at least overnight to dry

You need to add baking soda thats what helps it crystallize. You have everything just at the end when it looks like the soupy one add a teaspoon of baking soda it will start to bubble trust the processes when it dries it should crystallize. I suck at tik tok but I will try to repost the video I found. good luck💖💕

They are both different, one is the candy version and the other one is the warm dessert we make during the cold months as a comfort dessert. North gate should have the candy though, I have seen it there. Crystalized sweet potato candy.

They are called dulces de calabaza and those sweet potatoes have to be cured in food grade lime (cal). This lime looks like powdered sugar. This is what gives them the hardness or crispness when they boil. They have to remain in lime for at least one day. And lime settles so you have to keep mixing every couple of hours. Then you rinse the lime off really well and you slow boil the sweet potatoes for hours.
