Boil until it reaches to about 1/3 cup. This will take about 8 min. Remove from the heat and whisk in the cubes of butter. And then do the same with the brown sugar. Pour this into a bowl, along with the apple sauce, buttermilk and eggs. Whisk until smooth. In a large bowl, whisk together the flour, cinnamon, nutmeg, baking powder, salt and baking soda. Pour the wet into the dry and mix until combined. Cover with plastic wrap and transfer to the fridge to rest and chill for 1 hour. Maple Sea Salt Glaze: Whisk together the powdered sugar, maple syrup, milk and pinch of sea salt until smooth. Fry the Donuts: Cut out 4x4-inch squares of parchment paper and place them on a baking sheet. Turn the dough out onto a floured surface and roll the dough until it reaches about 1/2-inch thick. Using a 3-inch round cutter, stamp out the donuts. I like to use a 1-inch cutter to get donut holes with each donut. Transfer each donut and donut hole to a piece of parchment. Repeat with the remaining dough. Fill a shallow braiser or Dutch oven with 3 inches of vegetable oil. Heat the oil to medium heat until it reaches 350F. Fry in batches of 2-3 donuts. Gently place the donuts in the oil and fry, flipping once, until puffed and golden brown, about 1 minute per side. Remove from the oil and immediately place on a bed of paper towels. Repeat with all the donuts. Dunk the donuts in the maple sea salt glaze, flipping them over. I like them covered on both sides! Let them set on a wire rack. Serve immediately.
