Stir until the mixture forms moist, clumpy crumbs.
Press about ⅔ of the mixture firmly into the bottom of the prepared pan to form the crust. 3. Make the filling:
In a small saucepan, combine cherries, maple syrup, cornstarch, lemon juice, vanilla, almond extract, and amaretto (if using). Cook until evenly bubbly and gooey. 4. Assemble:
Spread the cherry mixture evenly over the crust.
Sprinkle the remaining oat crumble over the top. 5. Bake:
Bake for 35–40 minutes, or until the top is golden and the filling is bubbly. 6. Cool:
Let cool completely, then refrigerate for at least 1 hour before cutting into bars.
