This is sausage & artichoke one-pan lasagne that you are going to want to make! It is super easy, by snapping the lasagne sheets into the sauce and leaving to gently cook, it makes a saucy, delicious pasta. Serves 2-3 Olive oil 4 large pork sausages (good quality and if you can find fennel sausages, even better) 1 tsp fennel seeds 5 sprigs of thyme + more to garnish 1 white onion, diced 1 large carrot, diced 3 garlic cloves, sliced 1 heaping tbsp tomato purée 800ml chicken stock 100ml milk 160g artichoke hearts (in oil or water), drained 200g lasagne sheets (10 roughly) 1 tbsp balsamic vinegar Parmesan, for liberal grating Salt 1. In a large pan, add a drizzle of olive oil and heat over medium-high heat. Use a knife to score along the side of each sausage and remove from the casing. Add to the pan and use a spatula to break the sausages apart into small pieces. Add the fennel seeds and the thyme leaves. Fry for 10 minutes roughly, or until browned and crispy on at least one side. Remove from the pan. 2. Add another drizzle of oil if needed (will depend how much fat your sausages have rendered) and then add the chopped carrot & onion. Fry for 5 minutes then add the garlic and a good pinch of salt; fry for a further 5 minutes, still on medium-high. Add tomato purée and mix well, cooking for a few minutes or until it is a deep rust colour. If it starts to catch at the bottom of the pan, add a splash of water. 3. Add the stock and milk to the pan, snap in the lasagne sheets into large pieces. Add the sausages back into the pan and the artichokes. Mix together, season well, add the balsamic and bubble gently (lid off) for around 20 minutes, or until the pasta is soft and most of the liquid has been absorbed. 4. Cover with a good grating of parmesan, more fresh thyme and enjoy!
