Welcome to my grilling series! This Labor Day weekend, I’m firing up the grill with some Redfish on the Half Shell. Thank you @newageproducts.com for helping me kick up my grilling game with this incredible Kamado grill. Grilled Redfish on the Half Shell with Cilantro Potato Salad 4 tablespoons melted butter 3 cloves minced garlic 1 tablespoon finely grated Parmesan cheese 1 tablespoon Emeril’s Original Essence or Creole Seasoning 4 tablespoons olive oil One-fourth cup finely chopped fresh herbs, such as tarragon, thyme, basil, or chives One 3 1/2 to 4-pound redfish or puppy drum, fillets removed with scales intact Lemon juice, to taste Cilantro Potato Salad, for serving (recipe follows) Preheat a grill to medium-high. In a small bowl, combine the butter, garlic, Parmesan, Creole seasoning, olive oil, and herbs. Lay the fillets on the grill, scale side down, and brush generously with melted butter mixture. Close the grill cover and cook for 3 minutes. Open the grill and brush the fillets again generously with more melted butter mixture. Close the grill cover and cook for 3 additional minutes. Repeat this process until the flesh is firm and opaque, for a total cooking time of about 15 minutes for this size fish; keep an eye on it if your grill runs hot. Fish is done . Remove from the grill and serve immediately, drizzled with lemon juice to taste. Yield: 2 to 4 servings Cilantro Potato Salad 2 pounds small new potatoes, cooked and halved (unpeeled) 3/4 cup mayonnaise 3/4 cup cilantro leaves, roughly chopped 1 tablespoon minced garlic 1/3 cup finely minced onions 1 teaspoon salt Freshly ground black pepper Place the potatoes in a large mixing bowl. In a separate bowl, stir together mayonnaise with cilantro, green onions, garlic, salt and 7 turns black pepper. Mix well to combine. Add the mayonnaise to the potatoes and toss to combine thoroughly; cover and refrigerate up to 24 hours before serving.
