Today’s dinner: Korean Braised Chicken (찜닭 Jjimdak) Jjimdak was one of those dishes we used to order from time to time back in Korea, and I honestly didn’t realize how easy it is to make at home until now. Whats special about it is that it has a bit of a spicy kick with a deep savory flavor from ginger and jjajang powder. It’s supposed to have a bit of sauce so the glass noodle can soak up the good flavor and also, to enjoy it with a bowl of rice. my husband even brought home a bottle of soju, which we haven’t had in a while.  👩🏻‍🍳 Jjimdak (Korean Braised Chicken) Recipe Ingredients • 500g chicken thigh or drumsticks • 1–2 potatoes ( I used a really big one) • 1 carrot • ½ onion • 1 green onion • Soaked glass noodles (get the thicker one for jjimdak) • Rice cake (optional) • 1 tbsp sugar Sauce • 4 tbsp soy sauce • 1 tbsp oyster sauce • 1 tbsp corn syrup • 1 tbsp minced garlic • ½ tbsp ginger powder • ½ tbsp jajang powder (optional) • 300 ml water • Pepper • ½ tbsp pepperoncino (forgot to put this on the video) How to make • Cut all vegetables into similar sized pieces. • Mix all sauce ingredients in a bowl. • Pan-fry the chicken until cooked on the outside, then cut into bite-size pieces. • Add 1 tbsp sugar to the chicken and stir. • Pour the sauce in and bring it to a boil. • Once boiling, mix well and add the vegetables. • Cover and simmer on low–medium heat for 10–15 minutes, until potatoes are soft. • Add soaked glass noodles (and rice cakes if using), cover again, and cook for another 5 minutes. • Serve with rice and enjoy. #jjimdak #koreanchicken #comfortfood #koreancooking #braisedchicken
