Ive never had deer fat make the meat taste gamey. Only thing I've had make deer taste bad is poor field care. Deer eat the same thing as free range beef.

brine them for 12 hrs in water, a little white vinegar, plenty of kosher salt, a little bit of sugar....pull out, dry them, season them, let them hit room temp and cook like a regular tomahawk....just try it!!💯

There is a big difference between good fat and the tallow deer usually have. Some fat isn't to bad. Tallow is terrible.
