Mash until smooth or push through a fine sieve or ricer for that ultra-creamy texture.  5. Warm the butter and heavy cream together before adding them to the potatoes. Slowly whip them in until smooth and silky.   6. Season with salt and pepper to taste. Slowly pour in the strained stock while whisking constantly until smooth.   5.
