Ingredients * 10 oz soba noodles * 1½ lb steak * 4 regular bok choy, halved lengthwise * 1 bunch radish, thinly sliced * 2 cups shredded carrots * 1 small bunch fresh mint, chopped * 1 lime, zest and juice * 1-inch piece ginger root, minced * 4 tbsp soy sauce * 2 tsp chili sauce * 1 tbsp toasted sesame oil (divided) * Salt and pepper, to taste Instructions 1. Bring a pot of salted water to a boil. Add soba noodles and cook according to package directions. Drain and rinse under cold water. 2. In a bowl, combine lime zest and juice, minced ginger, soy sauce, chili sauce, and ½ tsp sesame oil. Stir to combine. 3. Pat steak dry, season with salt and pepper. Heat 1 tsp sesame oil in a skillet over medium-high heat. Cook 2–5 minutes per side, depending on thickness. Let rest 5 minutes, then slice thinly against the grain. 4. In the same skillet, add bok choy. Cook until tender, about 5–6 minutes. 5. Assemble salad: Add sliced radishes, shredded carrots, half the mint, and cooled noodles to the dressing. Toss to coat. 6. Divide noodle salad to 4 containers and top with steak and bok choy. Sprinkle with remaining mint. Keeps well up to 2 days in the fridge.
