It’s summertime, the living’s easy, and we cannot get enough watermelon recipes this season. But today, we’re trying something new with a watermelon cake for National Watermelon Day (or any day really)! 🍉❣️ Watermelon Cake Recipe      Ingredients:  • 3 cups all-purpose flour • 1 tablespoon baking powder  • 1 tsp kosher salt   • 1 cup oil   • 1 tablespoon Harmless Harvest Dairy-Free Yogurt Alternative
• 1½ cups sugar  • 4 large eggs  • ¾ cup whole milk  • ¼ cup Harmless Harvest Watermelon Organic Coconut Water     Instructions:  1. Line two 9-inch cake pans with parchment circles and grease sides of pans. Preheat oven 350°F.  2. In large bowl, add flour, baking powder and salt. Mix with a fork until combined.   3. In a medium bowl, add eggs, yogurt, milk, water and sugar. Whisk until combined then whisk in oil.  4. Add liquid mixture to dry mixture in large bowl. Mix with a nonstick spatula until there are no more lumps! Do not over mix or cake will be dry and crumbly.  5. Divide batter evenly between two pans and bake for 25-30 minutes or until inserted toothpick in center of cake comes out clean. Remove cakes from oven and let cool before frosting.   6. Using frosting of your choice, dye at least 2 cups of frosting to a light pink that matches color of cake. Spread an even layer of pink frosting between both layers and sides of cake. Frost top of cake with smooth consistency.   7. Using gel food coloring, dye another 3 cups of frosting dark green for outside of watermelon. Frost only outside of cake without disrupting top of cake where smooth pink frosting has set.  8. Use chocolate chips or jelly beans to create watermelon seeds and place on top of cake.  9. With a small amount of frosting, pipe a border to create the “rind” ring in between pink and green layers on top of cake.
