YONEZAWA BEEF CHATEAUBRIAND in Wakayama! “Yonezawa Beef” is produced in the Okitama area of Yamagata Prefecture. It is defined as Kuroge Washu raised for 32 months or more. The meat and fat quality must be 3 or higher as defined by the Japan Meat Grading Association. Additionally, the farm must be in one of the three cities or five towns of Okitama Yamagata, be certified by the Yonezawa Beef Brand Promotion Council, and have a registered farm with the longest breeding period of the animal. The breeding and raising techniques for Yonezawa cattle have been refined over centuries, incorporating traditional Japanese methods passed down through generations. The transformation of Yonezawa cattle from work animals to prized beef producers began in the Meiji period (1868-1912), when Japan opened its doors to the Western world. The combination of the region’s natural resources, centuries-old cattle-raising traditions, and the adoption of modern breeding techniques has contributed to the creation of the exceptional Yonezawa beef we know today. This prized beef variety is protected under the Geographical Indications (GI) system, a program established by Japan’s Ministry of Agriculture, Forestry, and Fisheries. The GI system guarantees that Yonezawa beef comes from the designated region, ensuring its authenticity and quality, while preserving the local culture and heritage.
