@katiemortkaa: A healthy but delicious comfort meal for these chilly fall days! I love curry because it’s so versatile and you can really use whatever veggies or protein you want! Ingredients: - 1 yellow onion - 2 bell peppers - 3 cloves of garlic - 1in nub of ginger - 1 package of shiitake mushrooms - About 10-20 shrimp but use as much or as little as you want - Salt - 1 15oz can of full fat unsweetened coconut milk - 3 tbps red Thai curry paste - Cilantro - 1 package of miracle noddles or rice noodles Steps: Chop onion and bell pepper and add to a large sauce pan or pot with olive oil. Sauté on medium heat. Add in minced garlic and ginger. Add in mushrooms and continue to sauté over medium/low heat until veggies become soft. While your veggies are cooking, cook your protein of choice. I used shrimp. Sear your shrimp in a pan coated in butter or oil. I do about 2-3 minutes on each side. Once finished, set aside in a separate bowl. In the pot with your veggies add in 1 15oz can of full fat unsweetened coconut milk. Add in 3 tbps of Thai red curry paste. Combine all ingredients together. Add in chopped cilantro. Add in noodles of choice. I like miracle noodles because they’re lower in calories and carbs but still taste delicious. Add in shrimp. Pro tip, fry off your red curry paste (am a personal chef, but also this is traditional). It really opens up the flavour. In this dish I’d have put it in before you added any other liquid and shrimp and caramelized it. You can also roast off the shrimp shells and make a stock with it to add flavour to this dish. Looks yummy.
