they met when the world was quiet, when both were just leaning to their own life, never thinking that the universe would choose such a peculiar moment to let their paths cross. it wasn’t thunderous. it was something that fell in tenderly. both had no reason to meet. yet somehow, through the hum of fate, they did. it was unexpected, yes, but it was honest-to-goodness, and in that oh-so ordinariness, it became extraordinary.  they lived worlds apart, separated by miles and unheard-of their each other’s lives. yet, they persisted. through the understanding, they were thinking of each other, somewhere out there, beneath the same moon. the distance could have been a cruel thing. but instead, it made them. it taught them stoicism. each communication, and each glimpse of each other’s face across a flickering screen became a lifeline.  and when they finally met, they just stood there, that there was still that space between them, a distance without touch, a closeness that could not yet be reached. just two souls, standing in the same space for once, after years of existing in different worlds. it wasn’t easy. but in some way, even that distance was beautiful. breathtakingly beautiful. even without holding hands, there was warmth. it was as though their sentiments had already memorised each other long before their souls did.  i often think about how their story defies what most people call love. it became itself while everything was still, while time held its breath, hoping that one day, everything would make sense. and it did. through it all, they stayed. not because it was easy, but because it was right. and that, to me, it was persistence that says, “i will still choose you, even when the world makes it hard.”  when i think of them, i think of hope. i think of how two people who were never meant to meet, who were born in different places under different skies, somehow found a way to make their souls align. i pray that they keep finding each other, again and again, in every lifetime this universe gives them. their story not written by chance, but by something deeper. they were proof that love can exist beyond reach, beyond reason. i pray that their names will always sound like a peace in one another’s maws. i pray the years will be kind to them. indeed, sometimes the universe writes better stories than we ever could. and perhaps, that’s the most beautiful thing about it, that somewhere, two people are meant to meet, no matter how impossible it may seem. and still end with something that leaves the world a little kinder.  #rania and #jaden forevermore.

I’ve been seeing the VIRAL DUMPLING SALAD everywhere and I immediately knew I had to try making a gluten-free version! I decided to make my own gluten-free, crispy dumplings using rice paper wrappers and then add them to a simple salad! Topped it with a creamy sunflower seed butter dressing. 10/10 recommend ☺️ DUMPLINGS Ingredients 2 tbsp avocado oil 1 lb ground chicken 1 medium sweet onion 1/2 purple cabbage 1 inch ginger 1 bunch green onions Gather your ingredients. Chop your vegetables. Add onions to an oiled pan and cook over medium heat until lightly browned. Add in ground chicken and salt and cook until lightly browned. Pour in purple cabbage, ginger, garlic and coconut aminos. Remove pan from heat and let cool for a few minutes. Add water to a baking sheet or bowl and dip each rice paper wrapper in water before rolling it. Place rice paper wrapper on a plate, add 2-3 spoonfuls of filling and wrap by folding each piece over and folding in the ends. Press down to stick. Double wrap each dumpling to make them extra crispy. Add dumplings to an oiled pan and cook for 5 minutes per side, or until browned. Serve with dipping sauce or over a salad and enjoy! SALAD Ingredients 1 bag coleslaw mix 1 cucumber, chopped 1 bunch green onions, chopped 1 bag dumplings (or homemade), cooked Dressing 1/4 cup coconut aminos 1 tbsp lemon juice 1 clove garlic 1/2 cup olive oil 1 inch ginger 1/3 cup sunflower seed butter Add dressing ingredients to a blender and blend until smooth.
