No mixer needed — Perfect with tea or coffee! 🤎 📝 INGREDIENTS Dry Ingredients: • 250g (2 cups + 2 tsp) all-purpose flour • 1 tbsp baking powder • ¼ tsp sea salt • 90g (¾ cup) walnuts, roughly chopped (plus extra for topping) Wet Ingredients: • 200g pitted dates, roughly chopped • 150 ml hot coffee • 1 tsp baking soda • 100 ml olive oil (or sunflower/rapeseed oil) • 130g dark muscovado sugar • 80g Greek yogurt (or sour cream) • 1 tsp vanilla extract 👩🍳 RECIPE 1. Soak Dates: Add chopped dates, baking soda, hot coffee & oil into a bowl. Mix and rest 15 minutes. 2. Prep: Preheat oven to 175°C (350°F). Line a 1-lb loaf pan with parchment paper. 3. Wet Mix: Add muscovado sugar, yogurt, and vanilla to the date mixture. Whisk well. 4. Dry Mix: In another bowl combine flour, baking powder, salt, and chopped walnuts. 5. Make Batter: Fold dry ingredients into wet, do NOT overmix. 6. Bake: Pour into loaf pan. Top with whole walnuts. Bake 45–55 minutes until a toothpick comes out clean. 7.
