@fitness4lazygirls: episode 3: eggplant Parmesan🍆👇🏼 I think I’ve really outdone myself this time🙂‍↕️ 60g protein for the WHOLE thing! The best part is: it’s so easy & simple with only a few ingredients. Fair warning, if you don’t eat dairy, this one is definitely not for you😅 RECIPE: - Slice 1 eggplant into 1/2-3/4 inch slices vertically, and then cut them in half length wise. - Lay on a baking sheet with parchment paper, and spray with olive oil, sprinkle with salt and pepper. - Bake at 425°F for 20 min on one side, flip and bake for another 10 min. - Now, gather other ingredients: 1/2 cup tomato sauce, 3/4 cup lowfat cottage cheese, 3/4 cup fat free mozzarella, and 1/4 cup Parmesan cheese. - Layer each ingredient in a pan: eggplant, sauce, cheeses- repeat until you’re out of everything. I had 3 layers total. - Bake COVERED in foil at 350°F for 30-40 min, then 10-20 min uncovered. - Garnish with parsley or basil and serve! MACROS for the entire thing (could easily split between 2 people as well): 60g protein, 70g carbs, and 12g fat for 585 cals✨ split in 2 would be 30g protein & 290 cal!
