Miso glazed cod ft the viral brothy rice 🤌🏽🍚 Rich miso broth, charred pak choi, and a whole lot of nourishing comfort 🥰 (This would work really well with salmon, chicken or tofu too) Protein 46g / Calorie 579 Recipe: -Mix 1 tbsp miso paste, 1 tsp dark soy, 1 tsp mirin or honey, and lil sesame oil, then coat the cod loin and leave to marinate for at least 20 mins. -Cook the rice until fluffy and set aside. -Heat a pan until hot, add a little oil, and sear the pak choi cut-side down for 3 minutes until lightly charred, then remove. -Then sauté 1 minced garlic clove, 1 tsp ginger, and the white part of the spring onion for 1–2 minutes. -Pour in 250ml chicken stock, bring to a simmer, then whisk in 1 tbsp miso paste, 1 tbsp soy sauce, and chilli if using; taste and adjust. Add the pak choi to the broth to warm through. -Preheat the grill to 220°C, line a tray with lightly oiled foil, wipe excess marinade from the cod, and grill in the top third of the oven for 6 minutes until golden, caramelised, and just cooked through. If you want, brush over some extra marinade in the last 2 mins for extra glaze. -To serve, place rice in a bowl, ladle over the miso broth, add pak choi, and the grilled cod.
