Tongan spinach (Abelmoschus manihot), also known as bele or aibika, is a leafy green vegetable and close relative of okra with a mucilaginous texture.  An attractive shrub with large, glossy leaves and striking burgundy stems, it adds a tropical vibe to an edible landscape. . . Now, how has this plant convinced me in just one growing season that it will likely become a staple summer veggie for me? . . Firstly, it's incredibly resilient, adaptable, and requires little care. Mine has weathered triple digit temperatures without damage, and it handles part shade very well.  Plants for a Future lists the minimum hardiness zone as 9.  If it can withstand chilly and moist zone 10a California winters without flinching, it'll be a real winner. . . Secondly, it is a perennial that is easily established from cuttings.  This is my first year growing it, so next year I will harvest a number of cuttings to begin accumulating planting stock for my project sites. . . And then of course, the YIELDS.  This plant is just getting going, and I can already harvest about 2-3 huge leaves per week - enough to incorporate into a recipe that will feed my family of three.  My plant is now beginning to develop laterals, so I'm expecting production to skyrocket next year. . . Lastly, it's absolutely delicious.  It's quite slimy when raw but has a pleasant mild, earthy flavor.  It's even better when you incorporate it into a slow cooker stew or curry, where it develops a soft melt-in-your-mouth texture with no sliminess at all.  The recipe shown here incorporating it is slow cooker butter chicken. . . My utmost gratitude goes to the generations of plant breeders from Asia and Oceania who have transformed this plant into the incredible food source it is today, as well as to my friend Natalie for gifting me the original cuttings. . .
