STRAWBERRY CRUMBLE CROISSANT CHEESECAKE BARS You simply need 🤌 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (9-16 bars): Croissant Crust: - 5-6 small croissants, preferably stale @The Fresh Market  - 2 tbsp (28g) salted butter, melted - 1/4 cup (55g) granulated sugar Vanilla Bean Cheesecake Filling - 16oz (2 blocks) cream cheese, softened @Philly Cream Cheese  - 1 cup (235g) greek yogurt, at room temperature (sub: sour cream) - 3/4 cup (165g) granulated sugar - 3 eggs, at room temperature - 2 tbsp (30g) all-purpose flour @Bob’s Red Mill  - 2 tsp (8g) vanilla extract or paste - Pinch of salt Strawberry Syrup: - ~1 1/2 cups (300g) strawberries, chopped and divided @Driscoll’s  - 1/4 cup (55g) granulated sugar  Crumble Topping: - 1/2 cup + 2 tbsp (90g) all-purpose flour - 1/4 cup (60g) brown sugar - 5 tbsp (74g) cubed salted butter, at room temperature  Instructions: Preheat the oven to 350F. Line an 8x8” baking pan with parchment paper. Set aside. Start by preparing the strawberry syrup. In a pot over medium heat, add half of the strawberries and the sugar. Cook until the strawberries release their juices and the mixture starts to turn syrupy.  Allow to simmer as you gently mash the strawberries with the back of a wooden spoon. Once the syrup has slightly thickened, remove from the heat and allow to cool. Once cooled, mix in the other half of the chopped strawberries. Set aside. Prepare the croissant crust. Slice each croissant in half lengthwise and use a rolling pin to press down and flatten. Assemble the flattened croissant pieces in the prepared pan, piecing and pressing them together as well as possible. Once assembled, brush a little melted butter on top and sprinkle sugar all over.  Press a piece of parchment paper on top of the crust.  Then, use oven-safe ramekins, bowls, or glasses to press down and place on top of the parchment paper. This weight will allow the croissant crust to stay flattened as it bakes, leading to a nice even surface and caramelization.  Bake the crust at 350F for 15 minutes with the parchment paper on top. Then, remove the parchment paper and return back to the oven to bake for another 5-7 minutes, until golden. Remove and allow to cool. Prepare the cheesecake filling. In a large bowl, beat the cream cheese to smooth. Add in the sugar, and beat to combine.  Add the eggs, one at a time, beating well after each addition.  Then, add in the greek yogurt, flour, vanilla, and salt. Beat on medium until well combined and smooth.  Pour the cheesecake filling over the crust and spread into an even layer. Gently tap the pan on a surface to eliminate any air pockets.  Bake at 350F for 40 minutes, until the edges of the bars are set with a slight jiggle in the middle.  While baking, prepare the crumble topping. In a small bowl, combine the flour, brown sugar, and butter. Use your fingers or a fork to mix until crumbly. Remove the cheesecake from the oven and add the cooled strawberry syrup, spreading into an even layer. Then, sprinkle the crumble on top. Return the cheesecake to the oven to bake for another 20-25 minutes, until the crumble is golden.  Remove from the oven and let cool to room temperature. Place the bars in the fridge for at least 2 hours or overnight. Once ready to serve, remove the cheesecake bars from the pan. Slice into 9-16 squares and serve.
