Prep the Pork: Score fat cap, season with FYR Hot Sauce and rub. Refrigerate overnight. 2. Smoke: 250°F for 8–10 hours until probe tender (200–207°F). Wrap at 175°F if desired. Rest 2–3 hours. 3. Pickled Onions: Combine all ingredients in a jar. Shake and let sit. 4. Salsa: Blend all salsa ingredients until smooth. 5. Wonton Shells: Cut wrappers into 4” rounds.
