No more BLAND Chicken 🐔, Chicken Tinga will make your neighbor jealous!! Ingredients • 1 ½ lbs chicken breast or thighs • 1 tsp oregano • 1 tsp salt SAUCE • 5 medium tomatoes • 1/4 white onion • 2 garlic cloves • 1 chicken bouillon cube (or 1 tbsp bouillon powder) • 1–2 chipotle peppers in adobo (adjust to taste) Cooking • 1–2 tbsp oil 1/2 onion slice Shredded chicken Salt to taste • Tostada shells • Sour cream • Shredded lettuce • Queso fresco (crumbled) ⸻ Instructions 1. Cook the chicken • Place the chicken in a pot with oregano, 1 tsp salt, and enough water to cover. • Simmer over medium heat for 25 minutes, until fully cooked and tender. 2. Blend the sauce • In a blender, combine tomatoes, ½ onion, garlic, bouillon, and 1 chipotle pepper. • Blend until completely smooth. Taste and add more chipotle if you’d like extra heat. 3. Shred the chicken • Remove chicken from the pot and shred finely with two forks (this keeps your hands from burning). 4. Cook the tinga • Heat oil in a large skillet. • Add the sliced onion and cook for about 2 minutes until softened. • Add shredded chicken, pour in the sauce, and stir well. • Taste and adjust seasoning with more salt if needed. Let simmer for 5 minutes. 5.
