Who needs a fancy bakery when you can just whip up these custard and almond brioche buns at home? 🤷‍♀️ I guess I will need to start accepting orders soon. Recipe is below, you're welcome. 😉  Custard and almond brioche buns Brioche- 850g plain flour or bread flour 100g sugar 4 tsp active dried yeast 100mls warm milk 1 tsp salt 4 eggs 200g butter, softened  Extra melted butter to brush over Custard- 3 egg yolks 1 cup milk 1/2 cup sugar 1/4 cup corn flour 2 tsp vanilla extract Glaze- 1 cup icing mixture 1 tsp vanilla  2-3 tbsp milk In a large bowl, add your flour and create a well in the centre to add the sugar, yeast and warm milk in to. Let the yeast bloom for 3-5 minutes before adding in the salt and eggs, and combining well with a spatula. Pour onto a floured surface and knead until it comes together. Now add in your butter, kneading it as you gradually add it in. If you find your dough is a bit too sticky, add a touch more flour as you go. Continue to need the dough for a total of 8 to 10 minutes. Then transfer to an oiled bowl, cover and let it rise for two hours in a warm spot.  Once the dough has doubled in size, you need to de-gas the dough and divide into 6-8 portions. Roll into balls and place on a lined baking tray. Using your fingers press from the centre out to create a divot in the centre to hold the custard, create a thin dough rim around the outside because it will continue to grow as it rests.  Cover your dough, and pop to the side in a warm spot for 20 minutes. To create the custard, in a bowl, add the eggs, vanilla, sugar and cornflour. Whisk them together. Gradually add in the milk continually whisking to ensure there are no lumps. Transfer the mixture to a pot on medium heat and continually whisk it until the custard thickens, this will happen quite rapidly so keep a very close eye on your custard and immediately take it off the heat when it begins to thicken. Now pop a tablespoon worth of custard in each of your brioche breads. Brush melted butter all over the outside of your brioche bread. Sprinkle over a handful of slivered almonds.  Bake at 180° for 15 to 18 minutes or until they are golden.  In a small bowl, combined together icing mixture, vanilla and milk, whisk it to create a smooth consistency and then drizzle it over the top of your freshly baked brioche custard buns.
