Juicy cherry tomatoes, Parmigiano cream, fragrant basil, and perfectly cooked pasta — all combined in minutes for the kind of dish you’ll want every night. Ingredients (per person): • 110g (4 oz) long pasta (spaghetti, linguine, or tagliolini) • 5–7 cherry tomatoes • 15–20g (0.7 oz) Parmigiano Reggiano, grated • 3–5 basil leaves • 1 clove garlic (remove the center) • Olive oil & salt How to Make It: Bring salted water to a boil and start cooking your pasta. In a cold frying pan, add olive oil and the garlic clove. Begin sizzling gently until fragrant. Cut cherry tomatoes in half and add to the hot oil. Cook for 1 minute, add a splash of pasta water, cover, and cook for another 2 minutes. In a bowl, combine grated Parmigiano with the tomato sauce (without the tomatoes) and stir quickly to create a creamy emulsion. Add basil leaves and your pasta al dente. Toss everything together, then fold in the cherry tomatoes. Serve immediately and enjoy this simple Italian perfection.
