@emijuju: maple pecan shortbread cheesecake bars shortbread crust: 3/4 cup (170g) unsalted butter, cold-ish 6 tbsp (75g) sugar 1 1/2 cups (180g) ap flour 1/4 tsp (1g) salt 1/2 tsp (2g) vanilla *cream together butter and sugar, then add in the vanilla. mix well. mix in the flour and salt, then press into a 9x9 pan. bake at 350 for 18-20 min. after baking turn the heat down to 325. filling: 16 oz cream cheese, room temp 2/3 cup (135g) brown sugar 1/4 cup (80g) maple syrup 1/3 cup (80g) sour cream/greek yogurt 1 1/2 tsp (4g) vanilla 1/4 tsp (1.5g) salt 2 eggs *cream together the cream cheese and sugar until smooth. then add in the maple syrup, sour cream, vanilla, and salt. one at a time, gently mix in the eggs. pour the batter over the shortbread crust and bake at 325 for about 35-40 min. the edges should be set and the middle a bit jiggly. let cool for about 1 hr. topping: 6 tbsp (85g) unsalted butter 6 tbsp (75g) brown sugar 1/4 cup (80g) maple syrup 1 1/2 cups (150g) chopped pecans 1/4 tsp (1g) salt 1/2 tsp (2g) vanilla *in a saucepan, melt the butter, brown sugar and maple syrup until dissolved. let simmer for a couple min when it starts to bubble. remove from heat and add in the pecans, salt, and vanilla. let cool a bit before adding on top of the cheesecake. then evenly spread on and chill for 4 hrs or overnight.@Level Unlocked #LUPartner
