Inspired by the wonderful Mary Berry, this Oven-Baked Sausages with Potatoes, Vegetables, and Gravy dish is bursting with flavour and simplicity, making it a keeper in your recipe collection. Let’s dive into the ingredients and get cooking! ### Ingredients: - 700g baby potatoes, halved - 3 carrots, peeled and cut into 5cm pieces - 2 red onions, each cut into 8 wedges - 2 garlic cloves, minced - 30ml olive oil (approximately 2 tablespoons) - 2 tsp dried thyme - 1 tsp dried oregano - Salt and pepper to taste - 8 - 10 sausages (500-700g) - Oil spray (optional) - 28g unsalted melted butter (approximately 2 tablespoons) - 20g all-purpose flour (approximately 2.5 tablespoons) - 500ml beef or chicken broth (approximately 2 cups) - Fresh thyme for garnish (optional) ### Directions: 1. **Preheat your oven** to 200°C (390°F for standard) or 180°C (350°F for fan/convection). Get that oven nice and warm while we prepare everything else! 2. In a large mixing bowl, combine the halved baby potatoes, carrot pieces, red onion wedges, and minced garlic. Drizzle in the olive oil, and sprinkle the dried thyme, dried oregano, salt, and pepper. Toss everything together until those beautiful veggies are well coated in oil and all the lovely herbs. 3. Next, add the sausages to the bowl and give it a gentle toss. You want everything to be nicely mixed without breaking the sausages. 4. Transfer this delightful mixture into a large roasting pan, ensuring the vegetables are roughly stacked about two deep. This allows them to roast beautifully and soak up all the flavours. 5.
