Creamy Tex-Mex Chicken & Rice Bake 🇺🇸🇲🇽 A family-style comfort casserole loaded with creamy rice, tender chicken, and cheesy Tex-Mex flavor! Ingredients • 1.75 lb (800 g) citrus-marinated or rotisserie chicken, diced • 1 oz (28 g) taco seasoning • 2 ½ cups (590 ml) chicken broth • 1 Tbsp (15 ml) olive oil • 1 ¼ cups (250 g) long-grain white rice, uncooked • 12 oz (340 g) frozen corn • 15 oz (425 g) black beans, rinsed and drained • 2 cans (10.5 oz / 295 g each) condensed cream of chicken soup • ½ cup (120 ml) milk • 16 oz (450 g) jar salsa • 2 cups (200 g) shredded Mexican blend cheese, divided Topping • 1 cup (100 g) crushed Ritz crackers • 2 Tbsp (28 g) melted butter Instructions 1️⃣ Preheat oven to 350°F (175°C) and grease a 9x13-inch (23x33 cm) baking dish. 2️⃣ In a large pot, heat olive oil and brown diced chicken for about 5 minutes; remove and set aside. 3️⃣ Add chicken broth, taco seasoning, oil, and rice. whats crazy to me is that there are so many different budget creators, I dont understand people hating on you. if you want absolute bare budget there are creators for that! you make amazing looking food that feels luxurious, and honestly, price per serving is probably like 3 dollars on that meal. that casserole dish is big.

Yessss! Aldi has been a staple since I was kid in the 90s. Love that it's more accessible to everyone. Also, prices are usually consistent so you don't have to shop sales which is helpful when every dime counts

I bet you the spices you need are in the cabinet. I havent used packet taco seasoning in years- that chicken looked like it had sazon on it plus taco seasonings: cumin, salt, garlic powder, onion powder, chili powder, (white or black) pepper, maybe a little bouillon.
