@smokehousenick: Bacon Wrapped Cheesy Onion Bombs Get yourself 6 large sweet onions (I prefer Vidalia) Cut them in half thru the core and then peal out the inner layers leaving only the thick outer layer. In a bowl mix 1 lb ground beef (I used K4 Gourmet Beef) 1 cup shredded cheese (I used white cheddar) 1 teaspoon black pepper 1 teaspoon salt 1 teaspoon smoked paprika 1 teaspoon garlic powder 1/2 cup Italian bread crumbs 1 egg Mix well but be careful not to over mix Form into medium sized meatballs. You want to match the size of the onion to judge it on a nice snug fit. Pair the matching onion half so that it seals up real good. Wrap with 3-4 pieces of bacon. Brush with your favorite BBQ sauce and dust with your favorite rub. For mine I used SPG. Place them on a try lined with foil or butcher paper and then into the smoker (or oven) for 45 min at 350 degrees. When the sauce starts to candy up they are ready to go.
