A beautiful crispy filo pastry base, topped with nuts, a creamy cheese layer, more filo pastry, kataifi pastry, pistachios, rose petals and sugar syrup.. Oh. My. God. You can thank me later.. RECIPE  *makes 4 mini cheesecakes* Filo Pastry Unsalted butter (melted) Handful of kataifi pastry, mixed with butter  Nut mixture: Handful of walnuts, chopped very small 1 crushed clove  Level tsp cinnamon  Cheesecake layer: 1 egg 250g tub mascapone cheese  35g double cream  60g caster sugar  1 tbsp Plain flour  Sugar syrup: 75g sugar 90ml honey ½ cup water  ¼ tsp cinnamon  1 tsp rose water  METHOD: 1. Add a layer of filo pastry to each tin and then brush with melted butter. Keep enough filo pastry hanging over the sides of the tins. 2. Repeat until you have 2 layers of buttered filo pastry. 3. Add the nut mixture to each tin. 4. Put on another 4 layers of filo pastry, with melted butter brushed in between. 5. Spoon the cheese mixture into each tin. 6. Bring the hanging bits on filo over the cheese layer, closing it up. 7. Brush with melted butter  8. Place the tins into the oven at 180°C for 25-30 minutes until golden brown. 9. While its baking, make the sugar syrup. Add all the ingredients to a saucepan except the rose water. Let it come to boil and put on medium heat until all the sugar dissolves (takes about 2 minutes). Then add the rose water and switch off the heat. 10. Once the cheesecake is golden, remove from the oven.  11. Add the kataifi pastry to the tops of the cheesecakes and place back into the oven for a further 10 minutes or until its golden brown. 12. Remove from the oven and pour on the sugar syrup.  13. Decorate with finely chopped  pistachios and rose petals. #baklava #cheesecake #pistachio #rose #Recipe
