LEMONY HARISSA SALMON BURGERS Throw it all in the processor (of course you can chop by hand!), pulse to combine, and you’ve got dinner quick. Packed with flavor thanks to harissa, preserved lemon, and fresh herbs. Juicy!  Makes 6 medium or 4 large burgers  Sauce:  ⅓ cup mayo 2 tablespoons grainy mustard 2 TB sliced scallion greens  Kosher salt and freshly ground black pepper to taste Burgers: 1 ¼  lbs salmon, cubed ⅓ cup coarsely chopped preserved lemon, seeds removed ¼ cup mint leaves  1/4 cup panko bread crumbs  3 scallions, cut into 1-inch pieces 3 TB mayo 2 TB harissa  1 TB grainy mustard 2 tsp kosher salt, plus more to taste ¼ teaspoon freshly ground black pepper Olive oil, for the pan Assembly: Hamburger buns Lettuce leaves  Red onion slices Make sauce: Combine mayo, mustard, greens and s/p to taste in a small bowl.  Make burgers: Combine the salmon, preserved lemon, mint, panko, scallions, mayo, harissa, mustard, salt, and pepper in a food processor and process until everything is incorporated, 20 to 25 pulses (these aren’t super chunky burgers). Form the burgers into six medium or 4 large patties. If you have time, chill them in the fridge for an hour.  Heat a heavy skillet over medium heat. Add a bit of oil to the skillet, then cook the burgers until golden and just cooked through, 3 to 4 minutes per side. Remove to a plate and cover with foil to keep warm. Toast the buns cut side down in the skillet (or brush with oil and broil lightly). Spread some sauce on each bun, layer with lettuce, onion, and a salmon burger. Close the buns and enjoy.
