MY 5-MINUTE HEALTHY BAKED OATS THAT TASTE LIKE DUTCH APPLE PIE 🍎
 Kickstarting Season 2 of my Big Batch Baked Oats Series with these cozy Dutch apple pie baked oats. Imagine warmly spiced apples, a sandy oat-walnut crust, and the comfort of pie for breakfast. I meal-prep this gut-healthy breakfast on Sunday so it’s ready in 5 min all week! It delivers 7 plant points per serving, is gluten-free, fiber-rich, and chilled overnight for extra resistant starch, a prebiotic that fuels your gut microbiome.  Nutritional value (pp): 7.7 g dietary fiber, 9.9 g protein, 66.7 g fruit
 Prep: 10 min Oven time: <40 min Serves: 6
 
 Ingredients:
 •2¼ cups/200 g rolled oats
 •1 tbsp ground flax seeds or chia seeds (optional but highly recommended)
 •½ tsp salt
 •1 tsp baking powder
 •½ cup/127 g pure apple sauce Sub with 2 large bananas or 2 large eggs
 •⅓ cup/50 g raisins (optional but highly recommended)
 •14 oz/400 g firm, sweet-tart apples (like Jonagold, Goudrenet, Elstar, Granny Smith, or pink lady), about 3 small apples. Washed and cored but not peeled. Two apples cut into ½ in/1.25 cm cubes, and one apple thinly sliced
 •1½ tsp ground cinnamon
 •heaped ⅛ tsp ground cloves (optional)
 •⅛ tsp nutmeg (optional)
 •1 tbsp fresh lemon juice
 •2 tbsp/30 ml maple syrup
 •2 tsp vanilla extract
 •1¾ cups/420 ml milk of choice
 
 Sandy Crust Topping:
 •½ cup/45 g rolled oats
 •¼ cup/28 g finely chopped or ground walnuts or pecans
 •1½ tbsp neutral oil
 •1 tbsp maple syrup or coconut sugar
 •pinch of salt
 
 IF YOU ARE A CELIAC SEARCH FOR THE CERTIFIED GLUTEN FREE SYMBOL
 
 Method:
 -Preheat oven to 375°F/190°C (350°F/180°C for a convection/fan oven or air fryer)
 -In a small bowl, mix the all the topping ingredients until combined and clumpy
 -Add the oats, flax seeds, baking powder, salt, raisins, apple cubes, 1 tsp cinnamon, clove, nutmeg, 2 tsp lemon juice, apple sauce, maple syrup, milk, and vanilla to a large bowl, or directly in a large, greased or lined baking dish (about 10x7 in/25x18 cm). Mix until well combined. In a separate medium bowl, toss the apple slices with the remaining cinnamon and lemon juice, then artfully arrange the slices over the entire surface of the batter. Sprinkle the sandy topping evenly on, or for an authentic look, in a fine grid pattern. Bake for 35-40 min, or until slightly golden and set. Allow to cool completely before cutting into 6 equal pieces. Enjoy it warm, at room temp, or cold from the fridge. Serve as is or with a big dollop of low-fat Greek yogurt to mimic whipped cream (for an extra protein and probiotic boost). For an extra hit of healthy fats and protein and to make this a complete meal, I love drizzling mine with a little peanut butter right before serving!
 
 Tips:
 • Low-FODMAP Options: Use plant-based milk and reduce the amount of apples to 5.3 oz/150 g Granny Smith or 4.2 oz/120 g Pink Lady apples. Other kinds are high-fodmap. Cube them all and only mix it into the batter
 • Low-Histamine Options: Omit raisins and swap the walnuts for pecans. Only use the spices you know that don’t trigger you
 • Resistant Starch Boost: Oats develop more resistant starch when chilled 24h—a prebiotic that fuels your gut microbiome! Store airtight for max benefits
 • Storage:
 -Let the baked oats cool completely in the baking dish before storing in an airtight container in the fridge for up to 6-7 days. Let it come to room temp, or microwave individual servings for 30-60 sec
 -For longer storage, wrap each piece in plastic wrap or parchment paper and place it in a freezer-safe bag. Freeze for up to 2 months. Defrost overnight in the fridge or microwave frozen pieces, unwrapped, at 30-sec intervals for 1-2 min.
