@mumsfoodies: 400-500g sweet potatoes boiled 100g coconut or brown sugar 3 x eggs 130g natural yogurt 75ml olive oil 250g self raising flour 1 tsp cinnamon 1/4 tsp tumeric & ginger Preheat your oven to 180C Boil and mash the sweet potatoes (boil in a small pan with the lid on for speed) I used a hand blender to get it smooth Add the sugar and then whisk the eggs in one by one. Add the yogurt and oil and whisk followed by the flour and spices but fold this in gently. Bake for 30-35 minutes 10 min at 180C turning the oven down to 170C after 10 min I let it cool completely and cut it and froze slices which will go from frozen to defrost straight in the lunchbox in the morning.
