Rich, savoury, and deeply comforting, it’s ready in minutes once you’ve made the dough! Ingredients (for 3–4 pax): For the Spätzle: • 250g (9 oz) fresh spinach • 250g (9 oz) plain flour • 100ml (3.4 fl oz) water • 3 small eggs (or 2 large) • Black pepper, salt, nutmeg to taste For the Sauce: • 400ml (1 ⅔ cups) cooking cream • 200g (7 oz) speck, sliced or diced How to Make It: Cook spinach in a pan until soft, then blend until smooth. In the same blender, add eggs, water, nutmeg, pepper, and salt. Blend again. Add flour and blend until a smooth, thick batter forms. In a pan, cook speck until crisp, then add cooking cream, black pepper, and nutmeg. Let the sauce thicken slightly. Bring salted water to a boil. Drop the dough into the water using a spätzle maker, potato ricer (with less water in the mix), or a pasta strainer with a spatula. When the spätzle float to the surface (within seconds), they’re ready. Toss them in the sauce for 2 minutes, then finish with Parmigiano and black pepper.
