This looks delicious. I have celiac and use GF measure for measure flour for a roux or a cornstarch or potato starch slurry instead, all work great. I've even made my own Japanese curry roux blockss, since I missed the convenience of the packaged ones.

The people asked, and I delivered. Here’s an easy way to use up ripe banana in a Japanese style curry. I maintain that this is a better way to use bananas than banana bread.
